Ris Lacoste's Peach Cobbler

"An old fashioned fruit cobbler made with fresh or canned peaches. Delicious served with vanilla ice cream!

Makes 25 individual cobblers

INGREDIENTS
DIRECTIONS
  1. Place drained peaches in a bowl and mix with honey, vanilla and lemon juice. Set aside to let peaches get juicy.
  2. Spray sides of individual oven proof ramekins with baking spray. Pour a bit of melted butter into the bottom of each ramekin. Place all dry ingredients into a mixing bowl and combine well. Add cream or milk and whisk until just combined. Scoop about 2 ounces of batter into each ramekin. Top with peaches, about 1 cup, trying to place them around the edge of the dish so that the batter bakes through the middle. Bake in a 350 degree oven until the batter is cooked through and browned on top and the peach juices bubble, about 30-40 minutes. Brush with honey and serve with ice cream of your choice.
